Strawberry and Spinach Salad

Dressing

1/2 cup light Olive oil
1/4 cup white vinegar
1/4 cup sugar
1 tbs poppy seeds
1/4 tsp paprika
salt to taste

1 bag of spinach
1 punnet of strawberries

New Zealand Pavlova

3 egg whites
1 cup sugar
3 tbs cold water
3 tsp cornflour
1 tsp vinegar
1 tsp vanilla essence

Beat egg whites until stiff, add cold water and beat again. Add sugar very gradually while still beating. Slow beater and add vinegar, vanilla and cornflour. Place on greased paper on greased tray and bake at 150 C (300 F) for 45 mins, then leave to cool in the oven. Warning do not open oven to look at pavlova as this will cause it to go flat and not rise.

Black Bean and Mango Salsa

1 cup canned black beans, rinsed
1 lg mango, @ 1 lb, cut into 1/4-inch dice
1/4 cup thinly sliced scallions, white and light green parts only
3 tbs finely chopped fresh basil
1 tbs extra virgin olive oil
2 tsp fresh lime juice
1/4 tsp kosher salt
1/8 tsp freshly ground black pepper
1/8 tsp ground cumin
1/8 tsp pure chili powder

In medium bowl, mix ingredients. Let stand at room temperature for 1 to 2 hours.

Ma's Apple Crisp

4 medium size Red Delicious apples
1 cup flour
1 cup brown sugar
1/2 cup butter
1 tsp cinnamon
1/2 tsp salt

Preheat oven to 375. Peel, core and slice apples into 8x8 pan. If desired, sprinkle with extra cinnamon. Blend all dry ingredients with fork into mixing bowl. Melt butter and mix into dry ingredients with fork, enough to make the mixture crumbly, not sticky. spread mix evenly over apples. bake for 40-45 minutes. Serve hot or cold.
